What is the valid-until field for?

It sets how long the quoted price holds. Costs and availability change, so a validity period (commonly 30 days) protects you from being held to a stale price.

Does it calculate the total?

Yes. Each line's quantity is multiplied by its price, the lines are summed into a subtotal, and the total is printed. There is no tax line on a quote — add tax at invoicing stage if applicable.
